Happy New Year!

A new SWANtastic year has begun!

Odette and Derek have so many plans for the new year and can't wait to make some SWANderful memories in 2025!

You might have many happy memories of 2024, but you also might have some sad ones and that's ok! Our experiences make us stronger and who we are. They also allow us to treasure the good moments and the things we love even more!

Princess Odette has been through a lot over the years! Not only has she been transformed into a swan, she has experienced loss, loneliness, hopelessness and so much more. Throughout all of this, Odette has held on to hope and remained a kind and strong person who is always herself and values what truly matters!

This year, remember to be yourself!

The Swan Princess wishes you a happy new year filled with SWANderful moments and SWANtastic suprises!

Pretty Princess Cake

Who says that cakes should only be made for birthdays and celebrations! Odette and Alise love to bake and try different cake recipes all year round! You can use this recipe to celebrate the start of another year or just enjoy it simply because you want to! You could even save it to bake for another special occasion later this year!
Why not make it themed on The Swan Princess and add swan decorations!
You can serve the cake as soon as it is ready or prepare it in advance and refrigerate it until you are ready (make sure to let it stand for 30 minutes before serving if you refrigerate the cake).
Ingredients:
For the Cake:
• 2 cups all purpose flour
• 1 1/3 cup granulated sugar
• 2 tsp baking powder
• 1/2 tsp salt
• 4 oz unsalted butter, room temperature
• 4 large egg whites
• 2/3 cup milk, room temperature
• 1/2 cup oil
• 1 tsp pure almond extract
• 1 tsp pure vanilla extract
• 10-12 drops of liquid red flood coloring
For the Frosting:
• 16 oz unsalted butter
• ½ cup heavy whipping cream
• 2 cup powdered sugar
• 2 tsp pure vanilla extract
• A big pinch of salt
• A few drop of red food color (optional)
Method:
1. Preheat the oven to 350F degrees. 
2. Next, grease and line the bottom of two 8 inch cake pans with parchment paper.
3. Now grease the top of the parchment paper and the sides of the cake pans. Then sprinkle flour on the side of the cake pan before tapping out the excess. You can then set aside your cake pans for now.
4. In a large bowl (you can use a stand mixer), add the egg white and half of the sugar and beat at a medium speed until stiff white peaks form (it will also be shiny). Put your meringue to one side.
5. In another bowl, cream the butter and sugar together (you can use a stand mixer again if you would like to).
6. Add the oil to the butter mix, along with the extracts and red food coloring.
7. Beat together until incorporated.
8. Sift the flour and baking powder together in another bowl.
9. Next, stir the salt into the flour mix.
10. Gently add a third of the flour mixture to the butter mixture and stir. Now add half of the milk before gently stirring again.
11. Add another third of the flour mix followed by the other half of the milk, gently stirring in between each addition to combine the ingredients.
12. Add the remaining third of flour and gently mix. 
13. Fold in the meringue.
14. Divide the cake batter between the two prepared cake pans.
15. Bake in the middle of the oven for 25-30 minutes until a toothpick inserted in the middle of each cake comes out clean.
16. Remove the cakes from the oven and set to one side until they are cool to the touch before removing them from the pans. Leave to rest on a wire rack until they are completely cool.
17. During the cooling process, you can begin making the frosting. Combine all of the frosting ingredients in a bowl and stir until fully incorporated and the frosting becomes white and fluffy (you can also use a stand mixer for this).
18. Add a few drops of the red food coloring and mix well to turn the frosting pink. Once fully incorporated, decide if you would like to add more coloring (use a couple of drops at a time and mix again, repeating the process until you have the desired color).
19. Gently place the first cake on a cake stand or plate.
20. Add approx. 1 cup of frosting on the top and gently level it out with a spatula or something similar.
21. Place the second cake on top of the frosting layer.
22. Take another cup of frosting and put this on top of the second layer. Level out the layer the same as before.
23. Use another cup of frosting to evenly line the sides of the cake.
24. If desired, add a few more drops of food coloring to the remaining frosting to make the color different to the base. Fill a pastry bag fitted with your preferred decorating tip.
25. Pipe the frosting on to your cake. You could do delicate swirls, simple designs, elegant patterns - you could even do a Swan Princess design!

Puffin's Pinecone Picnic

Odette has always been an animal lover and many of her dearest friends are animals too! This delicious treat is a great way to encourage wildlife and make sure your furry friends have something nice to eat during the winter months!
You will need:
• A pinecone
• Bird seeds/food
• Unsalted peanut butter
• A mixing bowl
• Scissors
• String
Instructions:
1. Firstly, ensure your peanut butter is at room temperature, this will make it easier to mix etc.
2. Remove any excess debris from your pinecone(s).
3. Spread the peanut butter over the pinecone. You can use your hands/fingers or something like a lollipop/popsicle stick to make sure you get into all the nooks and crannys.
4. Sprinkle your choice of bird seed and/or food so that it sticks to the peanut butter on the pinecone.
5. Tie some string to the pinecone, either in a loop or as one long strand depending on if you tie or hook your bird feeder to something.
6. Choose somewhere to place your pinecone and keep an eye out for visits from your animal friends!
