Candy Cane Cake

Princess Odette has made sure there are loads of savory snacks and sweet treats to enjoy over the holiday season! One of the cakes she has planned is this Christmas candy cane cake! It's easy to make and great for a festive twist on a simple cake! 

Ingredients:

• Cooking spray

• 3.5 cups cake flour

• 2 1/2 tsp baking powder

• 3/4 tsp baking soda

• 1/2 tsp kosher salt

• 1 cup unsalted butter, room temperature

• 1.5 cups granulated sugar

• 6 egg whites, room temperature

• 2 tsp pure vanilla extract

• 1.5 cups buttermilk, room temperature

• 1 recipe 7-Minute Frosting

• 3 candy canes, crushed (approx. 1/4 cup)

• Store-bought peppermint bark, roughly chopped (for decoration) 

Method:

1. Preheat oven to 325°F. 

2. Lightly grease and line three 8-inch round cake pans (grease the parchment too). 

3. Whisk the flour, baking powder, baking soda, and salt together in a bowl. 

4. In another bowl, beat the butter and sugar together with an electric mixer on medium-high speed until fluffy (this will take around 3-4 minutes, the mixture will be pale at this point. 

5. One by one, add the egg whites to the butter mix, beating until just incorporated each time. 

6. Add the vanilla to the butter mix. 

7. On a low mixer speed, gradually beat the flour mixture and buttermilk into the wet mix, alternating between the two (beginning and ending with flour mixture). Continue to beat together until just combined.

8. Divide the batter amongst the three cake pans. 

9. Bake for 25 to 30 minutes, until a skewer poked into the center of each cake comes out clean. 

10. Allow the cake to cool in the pans on wire racks for at least 5 minutes before turning out onto the racks to cool completely. 

11. Place one cake layer on a cake stand/plate and top with 1 cup frosting. Then sprinkle around half of the crushed candy canes onto the frosting. 

12. Place the second layer on the base layer and repeat the frosting and candy cane process. 

13. Place the top layer onto the cake. 

14. Cover the top and sides of the three tiered cake with the remaining frosting. 

15. Press the bark into the frosting on the sides of the cake to complete your candy cane cake. 

Cinnamon Christmas Candies

For those of you who like your Christmas treats with an added kick, try these delicious cinnamon candies! 

Ingredients:

• 1/4 cup granulated sugar

• 1/2 cup light corn syrup

• 1/4 tsp kosher salt

• 3/4 tsp red liquid food coloring

• 1/2 tsp pure cinnamon oil 

Method:

1. Lightly grease a large rimmed baking sheet. 

2. In a large saucepan, stir together the sugar, corn syrup, salt, and 1/2 cup of water. 

3. On a medium-high heat, without stirring, cook the mix until a candy thermometer reads 310°F, this will take around 15 to 20 minutes. 

4. Remove the pan from the heat and immediately stir in the food coloring and cinnamon oil. 

5. Continue to stir until all the bubbles have gone (approx. 1 minute). 

6. Pour the mix onto the prepared baking sheet and allow it to stand at room temperature for 1 hour. 

7. Crack the candy sheet into pieces and enjoy!  Sorry in airtight container for up to two months (stand back from pot when adding oil, as it can sting your eyes and nose).

 

Dried Orange Garlands

These Christmas decorations add a natural yet beautiful feel to festive celebrations. Many of the villagers in the Kingdom make these at this time of year, not just because they look incredible, but because it incorporates the beauty of nature too!  You can string these over chairs, over doorways, fireplaces - anywhere you like! The dried slices can even be used to decorate presents that you have wrapped if you didn't want to use them as garlands! 

You Will Need:

• 2 Navel Oranges

• Serrated Knife

• Cookie Sheet

• Paper Towel/Lint Free Cloth

• Parchment paper

• Scissors

• Twine

• Scotch Tape (optional) 

Instructions:

1. Preheat the oven to 250°F. 

2. Line the cookie sheet with parchment paper. 

3. Slice the oranges crosswise (1/8 - 1/4 inch thick) using a sharp serrated knife. 

4. Pat the orange slices dry with the paper towel (or cloth). 

5. Place the orange slices in a single layer, so that they don't overlap, on the baking sheet 

6. Bake for roughly 2.5 hours, flipping the slices over after about 75 minutes. 

7. After 2.5 hours, remove the cookie sheet from the oven and remove any slices that are beginning to brown before placing the remaining slices back in oven until dried and very slightly browned. 

8. Remove the orange slices from the oven and allow them to cool. 

9. Once the slices have completely cooled, use scissors to poke 2 holes about 1/2 inch apart on each orange slice. 

10. Thread the oranges onto twine (You may find it helps to wrap the twine end with a piece of tape to prevent unravelling). 

Salt Dough Ornaments

This year you can make your very own Christmas ornaments for the tree using this really easy and fun method!

Why not paint the ornaments with acrylic paint or add some glitter - Princess Odette loves some extra sparkle! 

You Will Need:

• 4 cups all-purpose flour

• 1.5 cups of warm water

• 1 cup salt

• String/Ribbon

• Skewer 

Method:

1. Combine the water, flour and salt in a mixing bowl. 

2. Knead the mixture until firm and smooth. 

3. Roll out the dough and cut out some festive shapes, we've listed some ideas below! 

4. Use a skewer to poke a hole in the top of each ornament (big enough to fit the string/ribbon through). Make sure not to put it right next to the edge. 

5. Place on a baking tray and bake at 300°F for approximately 1 hour (until the shapes are dry). 

6. Allow to cool completely. 

7. Thread the string/ribbon through the holes and tie the ends together so that you can hang your ornaments on the tree.
