Zelda's Witches Brew Stew

This spook-tacular stew is perfect for the cooler nights as we get further into Autumn and close to winter! It's filling and warming and the perfect dish to enjoy on a Halloween night before you indulge in all of your candy!
Ingredients:
For the Curry Paste:
2 tsp whole cumin seeds, toasted
1 tbsp whole coriander seeds, toasted
1 tsp whole black peppercorns, toasted
8 garlic cloves, minced
3 red chillies, slice
2 scallions, chopped
1 x teaspoon coarse salt
1/2 cup fresh coriander
2 stalks fresh lemongrass, trimmed and chopped
2 tbsp chopped peeled fresh ginger
2 tbsp fresh lime juice
Lime zest of two limes
For the Stew
1 can unsweetened light coconut milk
1 can unsweetened regular coconut milk
2 ounces spinach
1 medium zucchini, quartered lengthwise, sliced into 1 inch thick pieces.
12 oz boneless, skinless chicken thighs, cut into 1-inch pieces
12 oz boneless, skinless chicken breasts, cut into 1-inch pieces
3/4 cup basil
Coarse salt
Ground pepper
Serrano chillies, sliced thinly, to garnish
Method:
1. First you need to make the curry paste. Grind the cumin, peppercorns, coriander and salt with a pestle and mortar (or place them tightly in a small bag and grind with the bottom of a pan).
2. Add the rest of the ingredients for the curry paste.
3. Grind together until a paste forms.
4. Next, move on to the stew. Take 5 tablespoons of the curry paste that you made and puree with the spinach and 1 cup regular coconut milk in a blender until the mixture is smooth.
5. In a medium heavy stockpot, bring the remaining regular coconut milk and the light coconut milk to a boil
6. Reduce the heat and stir in curry-spinach mixture before allowing it to simmer for 5 minutes.
7. Add the zucchini and cook until it is slightly tender (approx. 5 minutes).
8. Add the chicken and season with salt and pepper.
9. Cook until the zucchini is tender and the chicken is cooked through.
10. Add the basil and garnish with the serrano chiles.
11. Serve with rice and lime wedges.

Scare-mazing Spooks

Create a spooky picture of some ghosts this Halloween using this easy technique! Why not give your ghosts different expressions for added fun!
You Will Need:
White Paint

4. Allow the paint to dry.
5. Use a black marker to add eyes.

This month we are celebrating the birthday of our good friend Number Nine also known as Jasper! This makes his zodiac sign the Libra and his birthstone rose quartz.

Libra is represented by the symbol of the scales reflecting Librans need for balance in all things.

Librans high value of balance means they are always working to create harmony, peace, and justice in the world.

This does not mean they are always working for the greater good, however. It does mean that they dislike conflict and will develop and use any skills needed to keep the peace, keep everyone happy, and ensure justice as according to them.

These skills often include their charm, intelligence, frankness, and powers of persuasion.

Librans often find that the key to finding this balance they crave is in fostering positive relationships with those closest to them.

Librans are very indecisive as they consider many different opinions and many different perspectives before making their final choice. They consider all consequences as they would rather not make a decision than disturb the delicate balance of peace.

When conflict eventually does arise Librans are one of the the most talented at resolving it. They rely on their charm and wit to diffuse the situation and prefer to just fix the problem themselves.

Rose quartz is a crystal that symbolizes unconditional love. Love for oneself and love for others. Rose quartz could be worn to boost self confidence and encourage stability in relationships.

We think this all sounds just like Number Nine!
